Skinny Pumpkin Spice Snickerdoodle Cookies

It’s officially fall (my fav season by the way) check out these skinny pumpkin spice snickerdoodle cookies to pair with that yummy pumpkin spice latte for you and a glass of milk for the kiddo..WIN

Cookies are clean and low cal….latte…not so much..hehehe

Skinny Pumpkin Spiced Snickerdoodles (credit for recipe)

  • 1 3/4 cups King Arthur white whole wheat flour or /same amount gluten free flour (if it is 1:1)
  • 1/2 tsp baking soda
  • 1/2 tsp cream of tartar
  • 1 cup sugar
  • 1/4 cup butter, softened (grassfed is best)
  • 1 tbsp agave or honey
  • 1 tsp vanilla
  • 1 large egg
  • 3 tbsp sugar*
  • 1 tbsp pumpkin spice*
  • cooking spray


Preheat oven to 375°F. Line two baking sheets with Silpat mats and spray with cooking spray.

Combine flour, baking soda, and cream of tartar in a medium bowl, stirring with a whisk.

Combine 1 cup of sugar and butter in a large bowl; beat with a mixer at medium speed until well blended. Add the agave, vanilla and egg; beat well. Gradually add the flour mixture to the sugar mixture, beating just until combined. Cover and chill for 10 minutes.
