Gluten Free Banana Nut Muffins – Kid Approved

Those little brown bananas that used to be yellow sitting over in your fruit basket.
Yep those over there.
STOP!! Before you throw them out.
Ripe and overly ripe bananas are perfect to bake with.
In our house we LOVE LOVE LOVE bananas and these gluten free banana nut muffins are seriously delicious.
We aren’t necessarily a gluten free family but it isn’t always a must so when we can substitute we do.
I said this was gluten free, not calorie free, or low carb or low calorie… (got it??))) GOOD!!!
These are perfect with coffee and as a treat but if you eat all of them you will be mad at me and the scale..ha.
Butter Beware… we like butter..give us all the butter…lol
I promise you will thank me later
Preheat Oven to 350

2 cups gluten free flour (I use arrow mills usually but this time I had some Pamelas Pancake mix… that works as well)

1/3 cup unsweetened applesauce

1 cup sugar

4 tablespoons of organic butter ¬†(We use Kerrygold grassfed … comes in gold package)

Walnuts (get a bag of the pre chopped ones)

1 teaspoon baking soda (if you don’t have any you won’t miss it)

1 teaspoon vanilla extract

1 teaspoon of cinnamon

2 eggs

3 ripe bananas (4 if they are small or if you really love bananas)


So this is so super easy and literally takes like 7 minutes or less… pour all the ingredients into a mixing bowl except walnuts unless you want walnuts on the inside and if so then by all means pour to your liking :-). Mix with a handmixer until smooth.

Pre grease muffin tins… these make about 18 so 1 and a half (hopefully you have two)

Pour into muffin tins

Don’t overfill… remember they will rise.

Sprinkle walnuts on top ( leave out if you aren’t nutty…hahahahaha)

Bake in oven at 350 for 30 minutes

Makes 18 muffins

Now I have no clue about nutritional content.. I know that bananas are a fruit and walnuts and butter are a fat… ummm the rest… I’m lost.

Eat warm with a great cup of coffee and you will be ready to tackle the day.
